Frost Bites - Visitors' Recipes


Here is a recipe for cold chicken salad, sent in by Mike who lives in the USA.

COLD CHICKEN SALAD

Ingredients

Cooked Chicken Meat (from one 3-4 pound chicken boiled for stock see recipe)

  • One-half red onion, chopped fine.
  • Four celery stocks, chopped fine.
  • Salt, pepper and mayonnaise to taste.
  • Method

  • De-bone the chicken and place in a bowl.
  • Add the onion and celery and mix.
  • Add salt, pepper and mayonnaise to taste.
  • Refrigerate for 2 hours.
  • Serve on bread as a sandwich or over chopped lettuce with tomato garnish. Serves four.
