Here is a recipe for cold chicken salad, sent in by Mike who lives in the USA.
COLD CHICKEN SALAD
Ingredients
Cooked Chicken Meat (from one 3-4 pound chicken boiled for stock see recipe)
One-half red onion, chopped fine.
Four celery stocks, chopped fine.
Salt, pepper and mayonnaise to taste.
Method
De-bone the chicken and place in a bowl.
Add the onion and celery and mix.
Add salt, pepper and mayonnaise to taste.
Refrigerate for 2 hours.
Serve on bread as a sandwich or over chopped lettuce with tomato garnish. Serves four.
